There’s something so comforting about the aroma of soup simmering all day, filling the home with warmth. When you use a crockpot, you get all that rich flavor without babysitting the stove. Pair it with freshly baked bread for a soul-satisfying meal perfect for cold, crisp days.
This soup is packed with tender beef, vibrant vegetables, and flavors that make you want to cozy up by the fire. This easy, set-it-and-forget-it crockpot recipe is perfect for busy days when you want a home-cooked meal with minimal effort.
Ingredients for Beef Vegetable Soup:
- 1.5 lbs beef stew meat
- 2 quarts beef broth
- 12 oz frozen corn
- 12 oz frozen peas
- 12 oz frozen carrots
- 12 oz frozen green beans
- 4-5 medium potatoes, diced into 1/2-inch cubes
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp Italian seasoning blend
- Salt and pepper to taste
- Extra virgin olive oil (EVOO) for browning the meat

Cooking Method:
- Prepare the beef:
Dice the stew meat into small, bite-sized pieces, about half an inch or smaller if you cook for little mouths. Generously salt the meat and set it aside to rest. - Sear the beef:
Heat a pan over medium-high heat, coat it with olive oil, and add the beef. Let the stew meat sear for 3-4 minutes on each side, forming a dark brown crust. Browning each side will develop a deep, rich flavor to your soup. - Transfer to the crockpot:
Once the meat has browned, transfer it to your crockpot, scraping in all the flavorful beef drippings. - Add broth and seasoning:
Pour in the beef broth and stir in the garlic powder, onion powder, Italian seasoning, salt, and pepper. Set your crockpot to low and cook for 6 hours. - Add the vegetables:
After 6 hours, add the frozen corn, peas, carrots, green beans, and diced potatoes. Turn the crockpot to high and cook for another 2 hours. - Check for tenderness:
After 8 hours of cooking, the beef should be tender, and the vegetables perfectly cooked. Taste and adjust seasoning if necessary.

Serving Suggestion:
